Gourmet Chicken - cooking recipe

Ingredients
    4 chicken breasts, boned
    1 large onion, chopped
    1 large green pepper, chopped
    1 large tomato, quartered
    1/4 c. capers
    1/4 c. butter
    1 (6 oz.) pkg. Mozzarella slices
    salt and pepper to taste
Preparation
    Brown both sides of chicken breasts in butter; set aside.
    In same skillet, saute onion and green pepper, which have been cut up in large chunks.
    Add cut tomato; saute for about 1 to 2 minutes. Put chicken back in pan; place a slice of cheese on each chicken breast.
    Spoon vegetables over chicken; sprinkle 1/4 cup capers over entire mixture.
    Put lid on; simmer for 1/2 hour.
    Serve with rice.
