Shrimp Etouffee - cooking recipe
Ingredients

1/4 c. oil
1 large chopped onion
1 small green pepper, chopped
1 celery rib, chopped
1 lb. shrimp, shelled and deveined
1 tsp. salt
1/4 tsp. cayenne pepper
1 Tbsp. flour
dash of Tabasco sauce
Preparation

Saute onion, pepper and celery in hot oil about 15 minutes. Add shrimp, salt and cayenne. Cook, stirring until shrimp are pink (about 3 minutes).
Sprinkle the flour over the shrimp and toss to coat. Add 1/2 cup water and bring to a boil. Reduce heat and simmer 2 minutes.
If more gravy is required, add another tablespoon flour and an additional 1/2 cup water. Stir in Tabasco sauce to taste (3 or 4 shakes is nice; more if you like it hot). If desired, sprinkle with parsley.
Serve with rice or orzo.
When serving this, make sure everything is done in advance as this cooks very quickly.
