Black Bean Casserole - cooking recipe
Ingredients

2 cans black beans, drained and mashed
1 can chopped Ro-Tel, drained
2 to 3 zucchini squash, sliced
1/2 onion, chopped
1 c. kernel corn, drained
flour tortillas, quartered (for serving)
shredded cheese
2 to 3 tsp. cumin
cayenne pepper to taste
salt and garlic powder to taste
Preparation

Combine beans, Ro-Tel and spices.
Microwave squash, onion and corn until tender, but crisp (or saute).
Spray dish with Pam. Start with bean mixture, next layer tortillas, then veggies, cheese, then bean mixture and so on.
End with bean mixture and top with cheese.
Bake at 375\u00b0 until bubbly, about 25 to 30 minutes.
