Bean And Bacon Soup - cooking recipe

Ingredients
    1 lb. dried navy beans
    3 qt. water
    8 slices bacon or more (ham can also be used)
    3 c. chopped onions
    2 c. diced potatoes
    2 c. diced celery
    1 c. diced carrots
    5 1/2 c. tomato juice
    4 tsp. salt
    1/2 green pepper
    1 bay leaf (optional)
    2 Tbsp. sugar (to taste)
Preparation
    Combine beans and water in large kettle.
    Bring to boil and boil for 2 minutes.
    Cover and let stand 1 hour, then boil again until tender.
    Fry
    bacon
    until crisp, then cook onions in bacon fat.
    Add
    to
    soup
    with
    bacon drippings.
    Also add tomato juice, then simmer 1 hour.
    Add rest of ingredients and simmer 30 minutes.
    Pressure can
    1
    1/2
    hours or cold pack 3 hours.
