Carrot Spice Cake - cooking recipe
Ingredients

3 c. finely grated carrots
2 2/3 c. sugar
2 2/3 c. water
2 c. seeded raisins
1 c. butter
2 tsp. cinnamon
2 tsp. nutmeg
4 c. all-purpose flour
4 tsp. baking soda
1 tsp. salt
1 c. chopped nuts
Preparation

Place carrots, sugar, water, raisins, butter and spices in a saucepan.
Bring to a boiling point and cook slowly for 5 minutes. Place pan over ice cubes to cool mixture quickly.
Sift flour, baking soda and salt together.
Add with nuts to first mixture and mix quickly and thoroughly.
Place in a well-greased floured tube pan.
Bake in oven at 350\u00b0 to 375\u00b0 for 50 minutes or more, about 1 1/2 hours.
