Yam Bread - cooking recipe
Ingredients

3 lb. yams
2 c. all-purpose flour
2 tsp. baking powder
1 tsp. nutmeg
1/2 tsp. cinnamon
1/4 tsp. cloves (ground)
1/4 tsp. allspice
1/2 tsp. salt
1 1/2 c. light brown sugar
4 large eggs (room temperature)
2 1/2 sticks butter (room temperature)
2 tsp. pure vanilla extract
1/2 c. half and half (room temperature)
Preparation

Preheat oven to 375\u00b0.
Boil yams until tender, then drain and mash well.
Set aside.
Sift flour, baking powder, nutmeg, cinnamon, cloves, allspice and salt.
Set aside.
Next, cream butter and brown sugar in a large bowl until light.
Add eggs one at a time to mixture, beating well after each addition.
Add half of dry ingredients and stir well, then add half of the half and half and stir well.
Repeat the same steps with the rest of the dry ingredients and half and half.
Add mashed yams and vanilla and beat well.
Pour into buttered 8 x 11 1/2-inch baking dish and bake in middle shelf of oven for 45 minutes or until toothpick inserted in center comes out clean.
Serves 8.
