Brenda'S Hawaiian Chicken With Rice - cooking recipe

Ingredients
    1 doz. chicken thighs, skinless
    honey
    1 c. unsweetened pineapple chunks
    1/4 c. maraschino cherries
    1/2 c. pineapple juice
    2 Tbsp. juice from cherries
    1/4 c. walnuts, chopped
    1 1/2 c. rice
Preparation
    Preheat oven to 400\u00b0.
    In saucepan, mix pineapple, cherries, juices and walnuts.
    Heat on low until fruits and nuts soften slightly, also allowing flavors to mingle.
    Meanwhile, rinse chicken thighs and pat dry.
    Lightly brush honey onto thighs, arranging in shallow baking dish.
    Pour 3/4 of contents of saucepan over chicken, spreading fruits and nuts evenly.
    Reserve 1/4.
    Bake chicken at 400\u00b0 for approximately 1 hour (until fully cooked and juices are evaporated).
    Turn chicken occasionally.
    Stir fruits and nuts.
    Cook rice.
    Serve with chicken as side dish.
    Use 1/4 reserved juices, etc. to serve warm over rice.
    Good with frozen peas.
    Yields 4 servings.
