Ingredients

1/2 c. cider vinegar
1/4 c. water
1/2 tsp. salt
2 tsp. dry mustard
1/2 tsp. celery seed
1/3 c. sugar
2 c. sliced cooked beets
1 medium onion, sliced
1 Tbsp. pickling spices
Preparation

Heat vinegar and water to boiling; add mustard, salt and sugar and blend; let boil.
Combine beets, onions, celery seed and spices.
Pour boiling vinegar over beets.
Cover and refrigerate overnight.
