Down-Home Chocolate Mayonnaise Cake - cooking recipe

1/3 c. unsweetened cocoa
1 c. boiling water
1 tsp. vanilla
3/4 c. mayonnaise
2 c. flour
1 c. sugar
2 tsp. baking soda
1/2 tsp. salt
Preparation

Preheat oven to 350\u00b0.
In a medium bowl, whisk together cocoa and boiling water until smooth.
Cool to room temperature.
Whisk in vanilla and mayonnaise.
In large bowl, combine remaining ingredients and mix on low speed for 30 seconds.
Add chocolate mixture and mix on low speed until moist.
Increase to medium speed and beat for 1 minute.
Scrape batter into two prepared pans and fill only 1/3 full.
Bake 20 to 25 minutes.
Allow cake to cool for 10 minutes.
Invert onto greased tacks.
Cool completely.
