Baked Onions In Wine Mushroom Sauce - cooking recipe

Ingredients
    1 can or 2 1/2 c. whole drained small white onions
    3 Tbsp. butter
    3 Tbsp. flour
    1 can cream of mushroom soup
    1/2 c. white wine
    1/2 c. slivered almonds
    1/2 c. grated Cheddar cheese
    4 c. cooked pinto, kidney or black beans
    1 Tbsp. olive oil
    1 smallish onion, minced
    2 to 5 cloves garlic, minced
    1 or more hot chili peppers, minced
    1 Tbsp. each: cumin and coriander
    1 tsp. oregano
    1 tsp. salt
    black pepper to taste
Preparation
    In a heavy frying pan, saute onion until soft in olive oil. Add garlic and saute a few more minutes.
    Add spices and chili pepper.
    Add beans.
    Mash with potato masher or the back of a wooden spoon until desired consistency is reached.
    May be pureed in a blender if desired.
