Morning Glory Muffins - cooking recipe

Ingredients
    2 c. flour
    1 c. sugar
    2 tsp. baking soda
    2 tsp. cinnamon
    1/2 tsp. salt
    2 c. grated carrots
    1/2 c. raisins
    1/2 c. chopped pecans
    1/2 c. sweetened shredded coconut
    1 apple, peeled, cored and grated
    3 large eggs
    1 c. oil
    2 tsp. vanilla
Preparation
    In a bowl, sift together the flour, sugar, baking soda, cinnamon and salt.
    Stir in carrots, raisins, pecans, coconut and apple.
    In a bowl, beat eggs with oil and vanilla and stir mix into flour mix until just combined.
    Spoon batter into well-greased muffin pan cups, filling to top and bake at 350\u00b0 for 35 minutes or until springy.
    Let cool for 5 minutes.
    Remove from pan.
