Pepper Relish - cooking recipe

Ingredients
    8 or 10 medium peppers (red or green), clean and in strips
    1 c. white vinegar
    1 Tbsp. salt
    3 c. sugar
Preparation
    Using blender or food processor, grate, then grind peppers. Leave juice and peppers together.
    Add salt; mix and let stand for 4 hours.
    Drain in colander.
    Squeeze slightly to get water out. Cook sugar and vinegar until sugar dissolves, then add drained peppers.
    Slow boil 45 minutes to 1 hour.
    Stir often.
    Done when it looks like jam.
    To can, boil jars about 10 minutes, then heat lids.
    Seal.
    I serve this topped on crackers spread with cream cheese.
