Pureed Potato Soup - cooking recipe
Ingredients

1 lb. potatoes
1/2 tsp. salt
1 to 2 c. meat stock
2/3 lb. trimmed white leek pieces
6 strips cooked bacon, drained
1 large onion
7 Tbsp. whipping cream
2 Tbsp. chopped parsley
Preparation

Peel and dice potatoes.
Place in saucepan with salt and water to cover.
Bring to boil and simmer for 20 minutes.
Thoroughly wash leeks and cut into rings.
Place leeks and a little water in separate saucepan.
Bring to boil; cover and simmer for 15 minutes.
Dice bacon, peel and slice onion into rings.
Puree cooked potatoes and their liquid into blender or food processor. Stir leek rings and their cooking liquid into puree.
Add hot meat stock until soup is smooth.
Stir in whipping cream.
