Candied Fruit For Fruit Cakes - cooking recipe

Ingredients
    4 orange peelings
    4 lemon peelings
    4 grapefruit peelings
    2 c. sugar
    1 c. water
    1/4 c. corn syrup
Preparation
    Collect fruit peel in freezer until you have 4 each of orange, lemon, and grapefruit. Wash and dice peelings very small. Slowly boil sugar, water and corn syrup over low heat for 30 minutes. Add peels and cook for 45 minutes to 1 hour (it is done when all syrup has been absorbed). Sprinkle some sugar on wax paper; lay peels on it and toss to distribute. Let set for a couple of days to dry out. Will last indefinitely in refrigerator.
