Mom'S Gazpacho - cooking recipe

Ingredients
    1 clove garlic
    1 pkg. taco seasoning
    1 1/2 c. tomato juice
    1 1/2 lb. fresh tomatoes
    1 medium cucumber, peeled and chopped
    1/4 c. minced green pepper
    3/4 c. minced green onion
    2 Tbsp. olive oil
    1 Tbsp. vinegar
    1 Tbsp. chopped cilantro
Preparation
    Rub large bowl with garlic.
    Empty taco seasoning into bowl. Add tomato juice and stir.
    Peel tomatoes, remove cores and chop into small pieces.
    Add tomatoes, cucumbers, green pepper and onion to tomato juice. Then add olive oil, vinegar and cilantro; mix well. Chill before serving.
