Green Pepper Steak - cooking recipe

Ingredients
    1 lb. beef chuck or round steak, fat trimmed
    1/4 c. soy sauce
    1 clove garlic, chopped
    1/2 tsp. ground ginger
    1/4 c. oil
    1 large onion, cut in eighths
    2 green or red peppers, cut into 1/2-inch strips
    1 Tbsp. cornstarch
    1 c. water
    2 tomatoes, cut in wedges
Preparation
    With sharp knife, cut beef into thin strips 1/4-inch thick. Combine soy sauce, garlic, ginger and oil.
    Add beef.
    Toss and coat meat with sauce.
    Cover and marinate at least 2 hours in refrigerator.
    When ready to cook, put beef mixture into a hot, large frying pan or wok.
    Heat until browned.
    Taste meat.
    If it is not tender, cover and simmer 30 to 40 minutes until tender over medium heat.
    Add vegetables.
    Toss until tender.
    Mix cornstarch and water.
    Add to pan; stir and cook until thickened.
    Serve over rice.
    Serves 4.
