Red Raspberry Salad - cooking recipe

Ingredients
    2 (10 oz.) pkg. frozen raspberries, thawed
    1 (20 oz.) can crushed pineapple
    1 (6 oz.) can frozen orange juice concentrate, thawed (undiluted)
    3/4 c. boiling water
    1 (6 oz.) pkg. raspberry flavored gelatin
    lettuce (optional)
Preparation
    Drain raspberries and pineapple, reserving juices.
    Combine fruit juices and orange juice concentrate.
    (Should be about 2 1/2 cups liquid.)
    Combine boiling water and 1 cup fruit juice; bring to a boil.
    Add to gelatin, stirring until dissolved; add remaining fruit juice.
    Chill until consistency of unbeaten egg white.
    Fold fruit into thickened gelatin.
    Pour into 6 cup ring mold and chill until firm.
    Unmold on lettuce, if desired.
    Yield: 8 to 10 servings.
