Citrus Vegetable Salad - cooking recipe
Ingredients

1 medium cucumber, peeled and sliced thin
1 medium grapefruit, peeled and cut into bite-size pieces
1 medium orange, peeled and cut into bite-size sections
1/3 c. red onion, sliced thin
1 tsp. lemon juice
1 tsp. olive oil
1 tsp. red wine vinegar
1/4 tsp. tarragon, crushed
1/4 tsp. salt
1/8 tsp. pepper
Preparation

In bowl, toss all ingredients.
Chill well before serving. Makes 3 cups or 4 diet servings.
