Apple Souffle - cooking recipe

Ingredients
    6 tart medium apples, peeled, cored and chopped
    1 (6 oz.) can frozen apple juice concentrate
    2 Tbsp. sugar
    2 Tbsp. ground cinnamon
    8 large egg whites
    powdered sugar and cinnamon for garnish
Preparation
    Preheat oven to 450\u00b0.
    In a medium saucepan combine apples, apple juice concentrate, sugar and cinnamon.
    Cook over medium heat, stirring until liquid is evaporated and apples are soft, about 9 to 10 minutes.
    Do not overcook.
    Cool slightly.
    Transfer to a food processor fitted with steel blade and puree (small apple bits may still be visible).
    Pour into mixing bowl.
    Butter bottoms and sides of 8 individual 1 1/4 cup souffle cups.
