Low-Fat Orange Bran Muffins* - cooking recipe
Ingredients

1 c. whole wheat flour
3/4 c. wheat bran
3/4 tsp. baking soda
1/8 tsp. salt
1 Tbsp. grated orange peel
1 egg white
1 Tbsp. vegetable oil
2 Tbsp. dark molasses
1 c. buttermilk
1/2 c. raisins (optional)
Preparation

Preheat oven to 350\u00b0.
In small bowl, combine flour, bran, baking soda, salt and orange peel.
In large mixing bowl, beat egg white; whip in oil, molasses and buttermilk.
Add dry ingredients to liquid mixture, mixing just until moistened.
Fold in raisins. Spoon batter into paper-lined muffin pans or pans prepared with nonstick vegetable spray.
Serve warm or cold.
