Fresh Tomato Salsa - cooking recipe

Ingredients
    2 Tbsp. red wine vinegar
    2 Tbsp. olive oil
    1 Tbsp. brown sugar
    2 cloves garlic
    1 Tbsp. honey
    6 to 8 large tomatoes, scalded, peeled, cored and chopped or mashed
    1/2 c. green pepper, chopped
    1 Tbsp. minced Serrano chilies or jalapeno
    1/4 c. green chilies, minced
    1 Tbsp. cilantro
    1/2 tsp. dried oregano
    1/2 tsp. red pepper (cayenne)
    1/8 tsp. ground cumin
Preparation
    Bring first 4 ingredients to a boil. Cook until reduced to half. Add honey. Remove from heat and add the remaining ingredients, stirring well. Cover and chill overnight. Keep refrigerated when not in use.
