Curried Shrimp And Rice(Serving Size: 6) - cooking recipe

Ingredients
    1 1/2 lb. peeled and washed shrimp
    3 Tbsp. butter
    3/4 c. chopped onion
    1/2 c. chopped carrot
    1/2 c. chopped celery
    1 c. uncooked rice
    3 tsp. mild curry powder
    1/4 tsp. ground ginger
    1/4 tsp. pepper
    1/3 c. golden raisins
Preparation
    Simmer shrimp in 2 1/2 cups water for 4 minutes.
    Drain.
    Save water.
    Saute onion, carrot and celery in butter for 5 minutes. Blend in rice and curry powder.
    Add mixture to shrimp water along with ginger and pepper.
    Simmer 25 minutes.
    Add shrimp and raisins.
    Simmer 5 minutes.
    Salt and pepper to taste.
