Catfish Stew - cooking recipe

Ingredients
    2 lb. catfish, cut into 1 1/2 to 2-inch pieces
    3 medium Irish potatoes
    1 large onion
    3 strips bacon, cut in halves
    about 4 c. water
    salt and pepper to taste
    hot sauce to taste
Preparation
    Fry bacon in heavy pot; add onion and cook until tender.
    Pour in water, seasonings and fish.
    Bring to boil for a few minutes, then turn heat down and simmer for 45 minutes to 1 hour.
