Dragon King'S Chicken - cooking recipe

Ingredients
    3 to 3 1/2 lb. chicken
    1/3 c. soy sauce
    2 Tbsp. dry sherry
    2 tsp. minced fresh ginger
    1/4 c. loose cinnamon-apple tea, about 12 to 14 bags
    2 Tbsp. brown sugar, packed
Preparation
    Rinse chicken, drain and dry well.
    Combine soy sauce, sherry and ginger.
    Pour over chicken in large plastic bag.
    Refrigerate 8 hours or overnight, turning occasionally.
    Combine tea and brown sugar; sprinkle evenly over foil lined pan.
    Place chicken breast side up on rack over tea mixture.
    Cover pan with foil.
    Bake at 350\u00b0 for 1 hour.
    Discard foil.
    Increase to 400\u00b0.
    Bake 30 minutes or until tender.
    Let stand 10 minutes before carving.
