Chili Con Queso - cooking recipe
Ingredients

1/2 c. chopped onion
3 Tbsp. chopped green pepper
2 Tbsp. chopped sweet red pepper (optional)
1 c. chopped tomatoes, peeled
2 Tbsp. butter or margarine
1 tsp. paprika
2 tsp. flour
1 lb. processed cheese, cut in chunks
Preparation

Saute onion, peppers and tomatoes in butter.
Stir in paprika and flour.
Add cheese.
Heat slowly for about 10 minutes, until cheese melts.
(Do not stir until cheese melts.)
Serve as a warm dip with corn chips or dribble over baked enchiladas or tacos. (Dip becomes thick when cool.
Reheat with a tablespoon of water. Dip may be frozen.)
