Seafood Gumbo - cooking recipe

Ingredients
    1 c. oil
    1 c. flour
    2 large onions, chopped
    1 c. celery
    1 bunch green onions
    1 gal. water
    1/2 c. parsley, chopped
    salt and pepper to taste
    2 lb. shrimp, peeled
    1 lb. crabmeat
    1 pt. oysters
    1/4 tsp. cayenne pepper
    file to taste
Preparation
    In a gumbo pot, mix oil and flour to make a roux (dark brown in color).
    Add onions and celery and saute well.
    Stir in green onions.
    Add 1 gallon water and boil slowly for 1 hour.
    Add parsley and shrimp; cook for 20 minutes on low fire.
    Add crabmeat and oysters.
    Add salt and pepper to taste.
    Serve over rice.
