Grated Broccoli With Parmesan - cooking recipe

Ingredients
    stems from 2 bunches broccoli, about 6 c., grated
    2 oz. Parmesan cheese (about 2/3 c., shredded)
    3 Tbsp. olive oil
    salt
    1/8 tsp. red pepper flakes (optional)
Preparation
    Peel and grate the broccoli stems.
    Shred the cheese.
    Heat the oil in a large frying pan over medium heat.
    Add the grated broccoli stems and 3/4 teaspoon salt and toss to coat.
    Cover, reduce heat and cook, stirring occasionally, until tender, about 10 to 15 minutes.
    Stir in red pepper flakes and cook 1 minute.
    Stir in the Parmesan cheese and serve.
    Serves 6, 128 calories per serving.
