Nonfat Raspberry Ice - cooking recipe

Ingredients
    1 (10 oz.) pkg. frozen red raspberries, thawed
    1/2 (3 oz.) pkg. (about 1/4 c.) raspberry-flavored gelatin
    1/2 c. boiling water
    1/2 c. cold water
    1/4 tsp. finely shredded lemon peel
    1 Tbsp. lemon juice
Preparation
    Sieve the raspberries; discard seeds.
    Set berries aside. Dissolve gelatin in the boiling water.
    Stir in cold water, lemon peel and lemon juice.
    Stir in sieved berries.
    Pour mixture into an 8 x 4 x 2-inch loaf pan and freeze for 3 to 4 hours or until mixture is firm.
    Break into chunks and place in a chilled bowl. Beat mixture with an electric mixer until smooth.
    Return to loaf pan and freeze about 2 hours or until firm.
    Makes 5 servings.
