Mini Reubens - cooking recipe

Ingredients
    1 loaf cocktail size rye bread
    1 1/2 lb. chopped corned beef
    1 can sauerkraut
    1/4 c. butter
    1 1/2 lb. Swiss cheese
    Thousand Island dressing (if desired)
Preparation
    Place rye bread (buttered on bottom side) on cookie sheet. Add a layer of corned beef. Saute sauerkraut in butter.
    Layer sauerkraut over corned beef. Add dressing now, if desired. Top with sauerkraut.
    Bake until cheese melts and is lightly browned. Makes approximately 40.
