Swiss Steak - cooking recipe
Ingredients

1 lb. round steak
olive oil
salt
pepper
1 onion
1 green pepper
1 small clove garlic
1 (8 oz.) can tomato sauce
1 envelope instant mushroom soup
2 cans water
2 stalks celery (optional)
Preparation

Cut and trim round steak into serving size pieces.
Wipe with paper towels.
Season with salt and pepper.
Pour a little olive oil in bottom of a heavy pot.
Brown meat, uncovered, on both sides.
After meat is browned, remove.
Under low heat, saute onions and green peppers.
Add a clove of garlic.
(May add celery also.)
When vegetables are limp, add a can of tomato sauce, instant soup mix and 2 cans of water.
Simmer 1 1/2 hours.
Meat will be \"fork tender.\"
(Add water, if sauce cooks down.)
