Butter Bean Salad - cooking recipe

Ingredients
    2 (15 oz.) cans butter beans
    2 Tbsp. olive oil
    1/3 c. lemon juice
    1/2 c. minced parsley
    1/2 c. thinly sliced green onions
    2 large tomatoes, cored and diced
    1 tsp. pepper
    1/3 c. packed Feta cheese
    1 or 2 green onions, ends trimmed
Preparation
    Drain beans.
    Rinse with cool water; drain well.
    In a bowl, mix beans with oil, lemon juice, parsley, sliced green onions, tomatoes and enough pepper to make salad slightly hot to taste. If made ahead, cover and chill up to 4 hours, then mix.
    Crumble cheese onto salad.
    Garnish with whole onions.
