Rice Salad - cooking recipe

Ingredients
    1 cucumber, seeded and chopped
    1/2 green pepper, diced
    1 can chunk pineapple, drained
    1 can (large) mandarin oranges, drained
    1/2 bag frozen mixed vegetables, cooked
    1 bunch spring onions, sliced
    1 can tuna (shrimp and crab meat if desired)
    1/2 lb. ham, diced or stripped
    cold rice (2 c. before cooking)
Preparation
    Toss everything except cucumber.
