Sherried Chicken With Peas - cooking recipe
Ingredients

1 1/4 lb. boneless chicken breasts, cut in strips
1/2 tsp. salt
1/4 tsp. pepper
3 1/2 Tbsp. butter/margarine
1 c. scallions, sliced
1/2 lb. mushrooms, sliced
1/2 c. dry sherry
10 oz. peas, frozen
2 c. chicken broth
3/4 lb. egg noodles
3 tomatoes, peeled and cut in eighths
2 Tbsp. cornstarch
Preparation

Season chicken with salt and pepper.
In a large frying pan, melt 2 tablespoons of butter/margarine over medium heat.
Add chicken and cook, stirring constantly until opaque, about 3 minutes.
Add scallions and mushrooms and cook 2 minutes.
Add sherry, peas and broth.
Cover, reduce heat and cook 20 minutes.
