Rich Chocolate Beet Bread - cooking recipe
Ingredients

1 (15 oz.) beets, drained (reserve 1/2 c. juice)
1 1/2 c. sugar
1/2 c. vegetable oil
3 eggs
1 tsp. vanilla
1 1/2 c. flour
3/4 c. cocoa
1 1/2 tsp. soda
1/2 tsp. salt
1/2 c. chocolate chips
1/2 c. pecans (optional)
Preparation

Puree beets with juice and transfer to large bowl.
Stir in next 4 ingredients.
Combine dry ingredients and add to beet mixture and mix well.
Stir in chips and nuts.
Bake in three 8 x 4 x 2 bread pans about 3/4 full.
Bake 30 to 40 minutes.
