Orange Amaretto Yams - cooking recipe

Ingredients
    2 lb. yams or sweet potatoes
    1/2 c. margarine or butter
    1/2 c. sugar
    2 Tbsp. fresh orange juice
    2 tsp. grated orange rind
    1/2 c. Amaretto
Preparation
    Cook yams in boiling, salted water just until tender; drain and peel them.
    Cut into thick slices and arrange in a glass baking dish.
    Cream together margarine, sugar, orange juice, rind and Amaretto.
    Cover yams with sauce and bake in a 375\u00b0 oven until surface is nicely browned.
    Cook 10 to 20 minutes.
    Yield:
    6 servings.
