Potato Cakes - cooking recipe

Ingredients
    2 c. leftover mashed potatoes
    1 small onion
    1 slice bread
    1 egg, beaten
    vegetable shortening
Preparation
    To the mashed potatoes, add onion and bread that has been pulled into small pieces.
    Mix well.
    Shape into 6 thick cakes. Dip into beaten egg and fry in hot vegetable shortening (about 3 tablespoons).
