Christmas Pudding Candy - cooking recipe

Ingredients
    2 lb. dates
    2 lb. shredded coconut
    2 lb. raisins
    2 c. nuts (walnuts or pecans)
    4 c. sugar
    2 Tbsp. butter
    2 c. light cream
    2 tsp. vanilla
Preparation
    Put through food chopper into a large bowl the first 4 ingredients.
    Combine next 3 ingredients.
    Cook to soft ball stage and add vanilla.
    Beat until creamy and cool.
    Pour sauce over fruit mixture and mix thoroughly.
    Form into logs 1-inch in diameter and desired length.
    Roll each log in a damp cloth and then in aluminum foil.
    Store in refrigerator at least one month. Will keep for a full year.
    Makes 10 to 12 pounds of candy.
