Marinated Peppers A La Danby - cooking recipe

Ingredients
    4 yellow bell peppers (can use other colors)
    3 Tbsp. olive oil
    2 Tbsp. red wine vinegar
    1 Tbsp. sugar
    1 tsp. oregano
    coarse salt to taste
Preparation
    Cut peppers in half lengthwise. Remove the stems, seeds and membranes. Slice into 3/4-inch strips. Cook in olive oil in skillet, covered, over low heat for 8 minutes or a little longer. Stir occasionally to prevent browning. Peppers should still have a crunch to them. Add the vinegar, sugar and oregano and stir. Cook 2 to 3 minutes more. Serve warm or chilled.
