Meat Loaf With Sweet Potatoes - cooking recipe

Ingredients
    2 lb. ground meat, preferably equal parts beef, pork and veal (or turkey)
    1 medium size onion, chopped
    1/2 c. chopped celery
    1 Tbsp. chopped fresh parsley
    2 large eggs, lightly beaten
    3/4 c. dry bread crumbs
    1 tsp. salt
    1/2 tsp. ground white pepper
    1 1/2 c. cooked, mashed sweet potatoes
    1/4 c. finely chopped green bell pepper or green onion
    1/4 c. pure maple or light corn syrup
Preparation
    Mix ground meats, onion, celery, parsley, eggs, crumbs, salt and pepper together in large bowl.
    Place between two large sheets of wax paper and roll into a rectangle about 14 x 10-inches. Remove the top paper and spread the meat with the mashed potatoes. Sprinkle with the chopped pepper or onion or both.
    Roll the mixture jelly roll fashion, seal the outside edge, and place in a shallow greased baking pan, seam side down.
    Bake in a preheated 350\u00b0 oven for 45 minutes.
    Drain off excess fat and drizzle the syrup on top of the loaf.
    Bake 25 minutes more or until the juices are clear and the loaf is golden brown.
    Yields 4 to 6 servings.
