Cream Of Broccoli - cooking recipe
Ingredients

2 (10 oz.) pkg. frozen chopped broccoli
1 c. chicken broth
1 Tbsp. minced onion
1/4 tsp. pepper
3 1/2 c. skim milk
2 tsp. cornstarch
6 oz. processed cheese (American, Cheddar; pick your favorite!)
Preparation

In a large pan, bring broccoli, broth, onion and pepper to a boil. Reduce heat to low; cover and let simmer 8 to 10 minutes or until broccoli is tender. Process until smooth, then return to pan. Add 3 1/4 cups of milk to pan and bring to a boil. Stir cornstarch into remaining milk until smooth. Stir into boiling soup; simmer 1 minute, until thick. Reduce heat to medium; stir in cheese until melted. Makes 7 cups.
