Norma'S Beet Salad - cooking recipe
Ingredients

1 small pkg. lemon jello
1 c. boiling water
1/2 c. beet juice
1/2 c. mayonnaise
2 Tbsp. vinegar (apple is good)
1/2 tsp. onion juice
2 c. cubed/shoestring/julienne beets (1 lb. can)
salt and pepper to taste
sour cream/sub for garnish
Preparation

Dissolve jello in water; add beet juice, vinegar and salt and pepper.
Fold in mayonnaise or lightly beat it in.
Set in freezer about 10 minutes.
Take out and beat until fluffy.
Fold in beets and onion juice.
Put in refrigerator to set.
Garnish with sour cream or sub.
