Red Rice - cooking recipe

Ingredients
    1/2 lb. lean bacon, cut into pieces
    1 medium onion, chopped
    1/2 bell pepper, chopped (optional)
    1 (16 oz.) can stewed tomatoes or 2 (8 oz.) cans tomato sauce
    1/4 tsp. oregano
    pinch of sugar, bay leaf, salt and pepper to taste
    1 c. rice
Preparation
    In a saucepan, cook bacon unti brown.
    Add onion and bell pepper.
    Cook until these are transparent.
    Add tomato choice, spices, bay leaf, sugar and simmer until bubbly.
    Add this mixture to the rice.
    (A rice steamer is the best cooker for this, but a large pot can be used.)
    Cook about 45 minutes, stirring well twice.
    Serve hot.
    Serves 6 to 8.
