New Orleans Crab Cakes - cooking recipe

Ingredients
    1 lb. blue crab meat
    1 lb. snow crab meat
    1/2 c. Bechamel sauce
    1/2 c. wet bread, crust removed and squeezed well
    1/2 c. onion, chopped fine
    1/2 c. peppers, chopped fine
    2 Tbsp. butter
    sprigs of thyme and parsley
    1/3 c. chopped scallions (fine)
    1 clove garlic, fine chopped
    1 c. olive oil
    2 c. bread crumbs
    salt and cayenne pepper to taste
Preparation
    Saute onion, peppers, scallions and garlic in butter for 4 to 5 minutes.
    Add parsley, thyme, Bechamel sauce, bread, salt and cayenne pepper.
    Mix all and cook for 3 to 4 minutes.
    Take off the fire and when cool, form the mixture into 2-inch cakes.
    Roll in bread crumbs and saute in olive oil until golden brown.
    Serve hot with a cold cucumber dill sauce.
    Serves 12.
