Grandma Bell'S Beet Pickles - cooking recipe

Ingredients
    3 lb. small whole beets
    1 c. water
    1 c. vinegar
    1/4 tsp. salt
    pickling spice (if desired)
Preparation
    Wash beets, leaving on roots and 1-inch of tops.
    Cover beets with boiling water and simmer until tender (about 25 minutes). Drain, slip off skins and trim beets.
