Paul Newman Cake - cooking recipe

Ingredients
    1 pkg. yellow cake mix
    1 (20 oz.) can crushed pineapple
    3/4 c. sugar
    Cool Whip
    2 (3 1/2 oz.) pkg. instant vanilla pudding
    3 c. milk
    3/4 c. flaked coconut, toasted
Preparation
    In a 13 x 9-inch pan, bake cake according to package directions.
    Meanwhile, in medium saucepan, combine pineapple and 3/4 cup sugar.
    Cook over medium heat until thick and syrupy (20 minutes).
    When cake is done, remove from oven and pierce with fork at 1-inch intervals.
    Pour on pineapple mixture and spread over cake; cool completely.
    Mix the pudding mix and milk; spread over cooled cake.
    Spread Cool Whip over pudding and sprinkle coconut on top.
    May garnish top with Thank You Brand cherry pie filling, leaving off coconut.
