Vegetable Sandwich Mix - cooking recipe

Ingredients
    1 large carrot, peeled
    1 small onion
    1 large cucumber, peeled
    1 large bell pepper, seeds removed
    1 envelope unflavored gelatin
    1 c. mayonnaise
    salt to taste
Preparation
    Grate all vegetables on \"fine\" side of grater. Squeeze vegetables to remove as much juice as possible.
    Save some of the juice. Mix 2 tablespoons of juice with 1 envelope of gelatin in small container and dissolve over hot water.
    Add gelatin to vegetables. Mix well.
    Fold in mayonnaise.
    Salt to taste.
    Put mixture in glass jar with tight lid. Refrigerate overnight.
    Makes about 3 dozen finger sandwiches.
