Eggplant Or Squash Casserole - cooking recipe

Ingredients
    2 c. eggplant or squash, cooked with onions
    1 stack Ritz crackers, crushed
    1 c. grated cheese (medium)
    2 large eggs
    1/2 c. milk
    2 tsp. salt
    pepper to taste
    1/4 stick butter
Preparation
    Cook eggplant with onion until tender.
    Drain and mash.
    Mix cheese and crumbs; set aside.
    Mix eggplant, egg, 1/2 milk, salt, pepper, butter and 1/2 of cheese and cracker mixture.
    Pour into greased casserole dish.
    Add remaining crumbs and bake at 350\u00b0 until set and browned.
