Vegetable Rice Ring - cooking recipe

Ingredients
    2 c. cooked rice
    1/2 c. mayo
    1 medium cucumber, seeded and chopped
    1 medium green pepper, chopped
    leaf lettuce
    1/2 c. Italian salad dressing
    1 c. sliced radishes
    2 small tomatoes, peeled, seeded and chopped
    1/4 chopped green onion
    1/2 c. chopped celery
    cherry tomatoes
Preparation
    Combine cooked rice and Italian dressing.
    Cover and chill overnight.
    Add mayo to undrained rice mixture and stir until combined. Fold in radishes, cucumbers, tomatoes, green pepper, celery and green onion. Press into a 5 1/2- cup ring mold.
    Cover and refrigerate 2 to 3 hours.
