Crab Cakes With Assorted Baby Greens - cooking recipe

Ingredients
    1/2 bunch scallions, finely chopped
    1 small yellow onion, finely chopped
    1 Tbsp. butter
    1 lb. crab meat, finely chopped
    1/2 cup mayonnaise
    1/4 cup mild goat cheese
    1 Tbsp. thyme, finely chopped
    1 Tbsp. parsley, finely chopped
    1 Tbsp. marjoram, finely chopped
    8 eggs, beaten
    6 cups bread crumbs
    4 dashes of Tabasco sauce
    salt and pepper to taste
Preparation
    Saut scallions and onion in butter.
    Combine crab, eggs, mayonnaise, herb, cheese, onions and Tabasco.
    Mix well.
    Add bread crumbs till mix is holding well enough to make cakes.
    Do not make it too dry or too wet.
    Add salt and pepper to taste. Make 1 oz. cakes and bread with remaining bread crumbs.
    Pan fry in oil till golden brown.
    Serve with greens and vinaigrette of your choice.
