Ingredients

2 eggs, separated
1 Tbsp. honey
1 c. plain yogurt
1 Tbsp. melted butter or safflower oil
1 1/2 c. whole wheat pastry flour, sifted
pinch of sea salt
1 tsp. baking powder
oil (for sauteing)
honey (for topping)
Preparation

Beat egg yolks, honey, yogurt and melted butter together. Sift flour, salt and baking powder.
Stir egg yolk mixture into flour mixture.
Beat egg whites until stiff.
Fold into batter.
